Two ingredient flatbread, fast and easy - no oven:

1 cup bread flour
1/2 block firm tofu

kneed them together
divide into four or more balls
roll on floured board to about 1/4 inch thickness
cook on a medium griddle for a few minutes, flipping when the bottom browns

This makes a nice chewy, flexible flatbread - good for wraps or tearing and picking up mushy foods.

I still can hardly believe that this actually works.

Going to try this for sure! I love to be able to serve a meal wherein every item is homemade.

There is also an incredibly easy recipe for beer bread. It only calls for flour, baking powder, a trifle of salt and a can of beer. While non-alcoholic beer works, I don't like the strong, yeasty flavour that this recipe produces, and I use a can of soda water instead.
