Homemade Sandwich Bread (Pain De Mie) Chef Jean-Pierre

Video is about 13 minutes long...really simple recipe....I bought my Pain de Mie pan from King Arthur Flour 10 years ago....now it is also sold on Amazon...

I use the shorter length pan as seen in video...as it is fresh bread without preservatives..
**** Remember to grease/spray the inside of pan and inside of lid..

RECIPE INGREDIENTS
3 1/2 cups Bread Flour
7 ounces Warm Water (about 100°F / 38°C)
2 teaspoons Active Dry Yeast
2 tablespoons Sugar
2 ounces Butter, room temperature
1.5 teaspoons Salt
3 ounces Warm Milk


RECIPE INSTRUCTIONS

In a small bowl, mix warm water with active dry yeast and let it sit for 10 minutes.
In a large mixing bowl, combine bread flour, sugar, butter, and warm milk. Pour the yeast mixture into the flour mixture and use a spatula to combine until a rough dough forms. Add salt and mix until well incorporated.
Transfer the dough to a lightly floured surface and knead briefly to form a rough ball. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm room (80°/90°) until it doubles in size, about 1 to 1.5 hours.
Once risen, lightly oil your hands and shape the dough into a rectangle. Roll it into a log, pinching the seams to seal. Place the dough in a greased loaf pan, cover, and let it rise again until it reaches just below the top of the pan, about 30 minutes to 1 hour.
Now Preheat the Oven to 400°F (200°C)
Bake the bread for 30 to 35 minutes, until golden brown. Remove the bread from the oven and let it cool in the pan for 5 to 10 minutes before transferring to a wire rack to cool completely. Allow the bread to cool for at least 2 hours before slicing to ensure the best texture.

One can buy a 5 pound bag of King Arthur Flour either All Purpose Flour or Bread Flour, for a price range of 5 to 6 dollars....

The price of a single loaf of Pepperidge Farms sandwich white bread is $4.79...

One can make say and easy 6 loafs of this bread with the cost of the flour ...

Say a $30 savings....at a minimum.

I remember buying, in the early 70s, good bakery loaves for 25 cents. Mom’s bread was a luxury!

You are right. Now it really does pay to make your own. The NYT no-knead is gorgeous every time. Very easy.

with No Knead Bread.... I was sold on it ever since...bread baking at home and making my own pizza too.
