What's for Dinner, Sat., July 6, 2024

Turkey burgers with spicy peach BBQ sauce. The sauce required 2 fresh peaches which were at the perfect stage today. Served with red onion & lettuce, toasted bun.

Cassava chips from TJ's.

Simple tossed green salad with cherry tomatoes, chopped red and yellow peppers, scallion, and mini-cucumbers. Oil & vinegar dressing.

Ginger lemon kombucha.

Dessert: cold Earl Grey with 1/2 'n 1/2. Chocolate chip cookie thins, those amazing little cookies where you can have 6 for 130 calories!

We went to Costco and the farm stand today.

Cold rotisserie chicken
Corn in the cob (nuked in the husk)
Grain and veggie salad
Iced tea

Dessert (if any) will be ice cream of choice

7. I made tomato soup from scratch tonight.

My tummy's been off a little bit... between the discord about Biden and trying to get the money together for car taxes and house insurance payment, my nerves are more than a little bit frayed. Needed something easy on it tonight.

Came out pretty good... which is a far piece better than my first attempt some time ago. But I'm missing something in it, still... and i can't figure out what it is! I added Basil and thyme, and a bit of "Pizza and Pasta Magic" spice that I end up putting on everything... even when I opened a can of tomato soup. Salt and pepper... but there's still something missing. Anyone have any suggestions?

tomato paste!

I have noticed when I make vegetable soup with a tomato base, it is bland. Boring. But then the RG told me to add a T or more of tomato paste, so I did. That was it!

but didn't. I added San Marino tomatoes and another 8 oz of special diced tomatoes I'd found and saved for this use. But because I did that, I cut out the tomato paste. Does make me wonder... thanks for the suggestion!

I added it to the pot of soup, along with another tablespoon of sugar from a suggestion below, and man... it tastes the best I've EVER had!!! Better than any can of soup, better than any I'd tried to make prior to this. I also grabbed some fresh living basil today and added a chiffonade of it (I love cooking with fresh herbs where possible). I don't know if any one addition would have done the trick, but the three additions together made this a soup to freeze and have on hand when I go into a fibro or lupus flare and can't eat solid food.

Thank you guys for the suggestions!!! I knew you'd suss out my problem! Love you much!

I didn't notice any untoward acidic taste, so I think I had that at the least minimum amount. Perhaps I'll add a little bit more next time and see if it makes a difference. Thanks! Sometimes it's the simplest, most basic elements that fill in the missing notes of flavor!
