What's for Dinner, Sat., Aug. 17, 2024

Appetizer is yellow zucchini with mint and garlic, and goat cheese on top of crackers.

I made this the other day as a side dish, and was happy with how it turned out. I decided that it has possibilities as an appetizer, so I decided to do another round today. This time I cooked the zucchini longer to make it crisper.

Turkey meatballs made with grated vegetables. Grated carrot, yellow zucchini, chopped Vidalia onion, and marjoram from the garden.

Pasta with tomato sauce.

Dessert: pumpkin pie.

Kombucha: cherry.

https://www.southernliving.com/recipes/chicken-collards-pilau - a tasty all in one dish. There are some cinnamon rolls left over from what we bought at the farmers market this morning, so that's dessert.

My husband took a vacation day today, so instead of going out for lunch, we had these: https://www.nutmegnanny.com/loose-meat-sandwich-maid-rite-copycat/ I think these would be satisfying even to non-Midwesterners who didn't grow up eating these like I did

We drove down to my MIL’s beach house in the OBX. She came with us so we’re having fun.

I picked up a couple dozen local jumbo shrimp and I’m making a batter to dip them in before frying them. They’ll be served with lemon wedges, tartar sauce, cocktail sauce and Cole slaw. Local lagers.

We travel too much. Tonight, we’ll sleep in the fifth bed in six nights!
