Just salted them and let sit for 40 hours in the fridge to dry the surface a bit.
I do medium, my wife medium well. Nailed both of them.
I also made cauliflower with a light cheese sauce. I never made that sauce before.
I par boiled the potatoes, cut like steak fries. Rinsed them, dried them, the shallow fried them until they were golden.
Never did that before, either. Came out crispy on the outside, fluffy on the inside.
Good holiday weekend splurge.

with a corn/pasta salad I made for a party yesterday, and grilled corn on the cob (yeah, it's a lot of corn, but it's the end of the season), and a green salad.

Plenty of leftovers for tomorrow - and Tuesday, and Wednesday.
