but I can't think of a way to get around the potatoes, which raise one's glycemic level.

This would be a good standard recipe to fix when you need to have something in the frig because you're short on time.

To the RG to see what he thinks. Lentils and cauliflower in particular, as they are low GI.

Cauliflower is an amazing substitute. Note how well it has done as a substitute for wheat pizza crust.

Lentils I love. Orange would be good. They are quick to cook, too.

Actually, she'd have balked at most of it, fresh food just wasn't her style. She loathed cooking and it showed, although there were a few weekend things she did rather well.

I probably made this more than once during my decade as a vegetarian. It looks really familiar., mos of what's in it from my garden.

Fun factoid: the only nutrient not supplied by potatoes is Vitamin A. Once in a while carrot or kale fixed that, it's why the Irish thrived on a diet o potatoes and not much else. The problem was that they grew only one variety of potato and when the blight hit the potatoes, it hit them, too. But treat those taters with respect. They're not just for propping the gravy up.

'White yam? Not famiiliar with, but good if it works! Haven't seen it @ the groceries I frequent.
