What's for Dinner, Wed., Oct. 2, 2024

I made macaroni and cheese using acorn squash, using a Pioneer Woman recipe. Other than the squash addition, it's made just like regular mac and cheese.

To go with it, I think I'll stop by the food bar at the grocery store and get a few BBQ ribs. If I run out of time, I'll just use a bratwurst.

When I looked at the recipe cooking time, I was shocked at how long it took. Around 90", if I remember correctly. It took every bit of that, and this is what reminded me that I don't make mac 'n cheese very often. All that stirring as you thicken the sauce with the addition of cheese and also flour to thicken it...takes a lot of time.

Pomegranate kombucha.

Dessert: half a caramel apple with chopped peanuts on the caramel.

scalloped potatoes.

No caramel apple with chopped peanuts on the caramel, but boy that does sound good! Instead I will have a slice of chocolate cake with glass of milk around bedtime.

my son, the weeknight chef, made it without any complaint, so it must have been pretty straightforward to prepare. The chicken was tender and the sauce delicious. We also had mashed potatoes and steamed broccoli.

Sushi rice, sautéed salmon fillet, slivered radish and cucumber quick-pickled in sesame oil and vinegar, avocado slices, with a miso mayo and seaweed sprinkles. Always a winner! 🏆
