Oh My Dutch Oven Back

It seemed an innocent project. Southern Folkways Alliance Cookbook recipe. OK, an extra trip to the grocery when our leftover kraut was insufficient. My wonderful spouse had provided two huge, delectable pork chops. These were big beasts, so the browning process was a bit tedious. But, eventually into the 350 for an hour, covered. Another 15m after that uncovered, in supposed attempt to brown and perhaps evaporate (hmm?).

We might have just dove in at that point, but the recipe had an onion-y roux step that , as Msr Roux, I could not resist. I admit it was not a big contributor to the final deal.

But the humping of that dutch oven over and over will I bet be something I recall in bed tonight despite a full-on massage today.
