What's for Dinner, Thurs., Oct. 10, 2024

Autumn Kale Salad with Fennel, Honeycrisp and Goat Cheese. Cookie 'n Kate recipe.

Has a dressing with maple syrup, Dijon, lemon juice, olive oil.

Cauliflower cheese soup with grilled peppers. Wonton strips for crispiness.

Blueberry kombucha.

Dessert: decaf Earl Grey and a cider doughnut.

a vegetable mix of asparagus, corn, carrots and red pepper. To be followed a while later by "Mackinac Island Fudge Ice Cream". If you've never had this particular flavor of ice cream it is a really marvelous mix of premium vanilla ice cream with butter/fudge sauce swirled throughout and small good quality dark chocolate fudge pieces.

Sometimes you see various brands have something similar but usually just a caramel swirl. It's OK but not the same. Also they'll sometimes use little peanut butter filled chocolate pieces. It's OK but again not the same. That butter fudge sauce really does the trick because it's not overly loaded like a Ben and Jerry's Ice Cream and you can really taste the quality of the chocolate pieces this maker uses. Like the kind of chocolate taste you get in a high end box of chocolates compared to a run of the mill chocolate bar. The company was originally over in Hudsonville, Michigan but relocated a little to Holland, Michigan so any Wolverines here will know the deal. Western side of the state.

4. Stuffed Mostaccioli

First time trying it.
Made my usual red sauce with ground beef over the pasta.
Used the bread machine to knead the dough.
Then cut into about 3" squares.
Filled each square with a mix of parmesano, ricotta, & a mishroom duxelle. Rolled them.
Put them in a baking pan, added about a ¼" of water and put them in the oven at 250° for around an hour.
I added water once, at least. Might have been twice.
I just grabbed one an bit into it to see if it felt done.
Then put them into the hot sauce for another 10 minutes.
Texture was really good. My wife thought so, too.

7. I had a salad...

and ice water. My favorite from my local pizza place and a cherry flavored benzocaine lozenge for dessert.



I woke up a couple of days ago with a surprise from my autoimmune disease, and my mouth and tongue hurt even when I'm not eating or drinking. I just wanted everyone to know what's up because I come and go here without rhyme or reason.

Eating has always been a challenge for me. I have a congenital diaphragmatic hernia. This crap autoimmune thing isn't helping.

But tomorrow is a new day and everything is better after a good night's sleep.
