What's for Dinner, Fri., Oct. 11, 2024

I'm dining with a friend this evening and we are going to Olive Garden. I know, don't laugh.

I've looked at the menu and kinda' think I'll have the "create your own pasta", which includes soup (my choice, chicken & gnocchi), of course, the salad (yum), and not sure on the pasta, but probably creamy mushroom.

They have an interesting cheesecake for dessert which I hope my friend will want to split with me because it's 610 calories (back of hand to forehead). Pumpkin cookie butter cheesecake. Decaf coffee to go with it.

Sure wish they served kombucha, but of course they don't.

I went to my local IGA for ground beef. They also had heavy spareribs, so that's dinner. Got a couple of lovely golden delicious apples, can't wait to taste

I was gluten-free for about 5 years, but it didn't solve my health problems. So now I am eating gluten and trying other remedies. Anyway, what I learned was I really really missed Olive Garden (their gf pasta is blah). On the other hand, all I missed at Red Lobster were the Cheddar Bay biscuits and it was so painful to pass them up that I didn't go there any more. Luckily, for a pretty price, I could buy gf Cheddar Bay biscuit mix, which was good. So, enjoy Olive Garden!

I just wanted sloppy Joe's, but kinda tired of tomato based sauces, so, I had some cream in fridge. Made a basic alfredo, but used asagio and sharp white cheddar, instead of parm. As I thought it will ( I hope) meld better with the proteins. So far, as I taste, I've added some crispy bacon crumbled and chopped mushrooms to the alfredo. And found some fresh brioche at bakery.
If this works out, I'm gonna call it, " sloppy Blondies"
If it doesn't, I'll never speak of it again,, as my Seahawks kept me awake, way to late last night , to watch them lose.

If you know me, I had gastric bypass, pastas do not do well with my body.this was a simple replacement for sloppy Joe's,
I guess, it could almost be a stroganoff with pasta, but ,
Parm attaches it's self to pasta, very well. I don't eat pasta, so I adjusted the Cheeses, and no sour cream, for my , shall we say, " lack of stomach"? The Cheeses add protein, with few, carbs , I ate this , open face , on a half bun.
Turned out, just another, hi protein, low carb meal. Prolly would taste good on noodles,, but would need something to attach to the pasta, a parm, or a smoked paprika, and no sour cream.

I was just making, a hi protein, lo carb dish. It's what my body craved. Quality, over quantity, I just wanted a sloppy Joe, , this was, a , sloppy blonde, no offense meant.
Yes, it's my memory, in a way, of stroganoff , with a few twists,, I added things , that attach to proteins, not carbs,
hence the difference,
Noodles need , 2 things to add flavor, salt, lots of salt, even in the water, and heat, 212 at least to boil pasta, that heat, would have, " burnt" the cheese, , and something, to attach its self to the pasta. My sloppy blondes were very good, imo proteins picked up the flavor.
, tomorrow, i ll use the leftovers, on baked tater..there's my carbs., nature's carbs.

Wrong Cheeses maybe? Something just didn't taste right. I believe, the thought is right, cooking wise. It just tasted, " sharp" too much of a bite., suggestions?

sandwiches and potato salad.

Later before bedtime blueberry pie with vanilla ice cream.

My last of my company left just before noon today. So maybe after this weekend everything will get back to normal. I really missed my afternoon naps this past week. I must be worn out, I just woke up from a three hour nap.

We have 8 tomahawk ribs marinating in olive oil, thyme, rosemary, minced garlic, salt and pepper. I'll grill them to medium rare.

I'm also going to grill a vegetable medley: green & red bell peppers, a large Vidalia onion cut in half and quartered potato slices.

This weekend will probably be our last chance to use the grill. The evenings a getting pretty chilly in the mountains!

except with tuna for the protein - also farro, which I marinated in a vinaigrette with lime juice and rice vinegar, shredded carrot, red cabbage, sliced cucumber and radish, chopped tomato, with a sriracha mayonnaise as dressing.

We had a cold supper last night too (it's warm for October here) - arugula with chopped cooked beets, slices of Honeycrisp apple, and goat cheese. My son made a vinaigrette that included apple cider vinegar, olive oil, dill, onion and garlic powder, and some of the liquid from cooking the beets.

steamed artichokes for an appetizer, and pizza with what leftover cheeses we can find in the fridge, green pepper, and basil from the garden.

I bought two yesterday. I added more tomatoes the angel sweet grape variety and a sweet cubanelle pepper tonight. I forgot to add the avocado I have so I might eat it for breakfast.

I had an extra strength benzocaine lozenge before instead of after tonight and it helped with the pain. Unfortunately, it changed the taste.

I love OG. Not so much for the food but more for the memories. I hope you enjoyed the time with your friend, NJCher.

I do love the never ending salad. If that is still a thing. They had a chocolate dessert that my mother and I used to share. It was a brownie creation, iirc.

It's where Daddy would take his "girls" out to eat at least once a month. I miss those family outings so much. He and mother are gone now. He was a wonderful man and he really, really loved us.

It took me a few hours and a couple of attempts to write this because it makes me sad to remember. It's hard to write through tears.

Still no change in my pain situation. I have so much food here I need to fix and can't eat most of it because it hurts so much.

I'm going to try and figure out what I can cook and freeze before it goes bad. If I don't get better soon I'll guess I'll go to the doctor.

i made a veggie succa sauce for pasta for sat + probably all week. had to use up sad grape toms + bell peppers. celery had a ice bath.
