What's for Dinner, Tues., Oct. 15, 2024

Posting early due to a late-day work session at the garden.
You know how companies will give back to the community by paying their employees and sending them on a volunteer mission? Well, that's what we have happening today! Will get lots done, I hope. I have to supervise all this.

First, appetizer will be rosemary wheat crackers with crab rangoon dip.
For dinner, I'll be having broccoli-garbanzo-cassava soup with an arugula salad and tomatoes.
Dessert might be a few chocolate squares with tea.

Pecan pie with cool whip before bedtime.

2. Lemony orzo and chicken soup

Using some fennel bulb and kale in it too since I have from the salad yesterday.
Roasting more kale and fennel together too.
Will dress that with a little of the cooked lemons I did for the chicken soup.

3. Lentil soup, garlic naan and hot decafe tea

I used this recipe
Ingredients

Original recipe (1X) yields 8 servings

2 (32 ounce) containers chicken broth

2 cups dry lentils

1 medium onion, diced

¼ cup tomato paste---I used Harissa paste for a bit of heat

2 cloves garlic, minced

1 tablespoon ground cumin

Directions

1 tablespoon ground cumin


Bring chicken broth, lentils, onion, tomato paste, garlic, and cumin to a boil in a large saucepan over medium heat. Reduce the heat, cover, and simmer until lentils are soft, 30 to 45 minutes.



It has been chilly & drizzly today, so hot soup & bread sounded good.

I made from scratch....Broccoli cheddar creamed soup.... No Knead bread... glass of white wine..

and an avocado/tomato/cucumber salad, cause that's what's in the fridge and needs to be eaten before we go back east.

Went there for a cocktail after visiting Dad at the nursing home and ordered a small appetizer plate.
