"Chick" Pea Salad Sandwich with Cranberries and Pecans. Recipe is from A Hearty Book of Veggie Sandwiches by Jackie Freeman.
The dressing is mayo, apple cider vinegar, Dijon, maple syrup, and salt and pepper. The rest is chopped celery, cranberries, pecans, and green onions. Lettuce to line the wrap or focaccia.

Cherry kombucha.
Cantalope for dessert.
Scampi served on white rice. Salad with red leaf, tomatoes, red onion rings, croutons and Italian dressing. Garlic bread and chianti.
Brandy and cut-throat backgammon for dessert.

(849 posts)added to sautéed in evoo and veggie broth, red bell pepper, carrots, red onions, chopped garlic, porcini mushrooms and butter beans. After taken off the heat, mix in fresh chopped parsley, basil and oregano. Farro wheat will be mixed in at the end. Will sprinkle on some vegan grated parm and enjoy the still local produce in this mail. Freeze will be happening soon. Taking advantage of those beautiful and tasty herbs.

(71 posts)Cavatappi (some brands call it cellentani) with a tomato sauce made with ground turkey and one link of Italian sausage and LOTS of sliced garlic. I've been using ground beef with a sausage link for years, but I spotted a chub of frozen ground turkey for $1.79 at the store. That's less than half the price of beef and considerably cheaper than ground pork, so I gave it a shot.
Not bad at all, actually.
I actually had that chub of turkey in my freezer for a few weeks while I decided what to try with it. I am certain I wouldn't like a meatloaf made with turkey, and forget about tacos with turkey; that simply isn't happening at my house. But pasta sauce? A fair budget-friendly compromise.

(37,864 posts)I prefer them over beef or pork. Tomorrow I have a plan to grill peppers and use them as a layer or stuffing for a turkey meatloaf. I'm also going to put a layer of Swiss or some other type of cheese on it.
What I really like in a turkey meatloaf is grated vegetables, such as carrots and onion. I'll be doing that, too.
Another thing I like to do is put a glaze on it. Diluted catsup, mustard, and brown sugar is my fave.
I actually got hooked on ground turkey meatloaves when an upscale grocery store here (Kings) put them on special. I wouldn't dream of pay 10 for a grocery store made meatloaf, but I would pay 4 or 5, so I tried one. Got hooked. I bought them as long as they were on special but once they quit doing that, I had to make my own.
Great comfort food.
