Related: About this forumAnyone ever prepared Eggplant with Chermoula?
Eggplant is roasted in the oven - cut side down.
Lemon is zested, garlic is crushed, cilantro is chopped
but I am not sure how to eat it. Slice, cube, or just scoop it?
Thanks

Was excellent. We did scoop it. And topped it with chickpeas for a complete meal

I am grateful to the experts on this group that suggested to use both aluminum and parchment

I could Google it of course, but once again a word I've never heard of before!

As I used for this dish. Parchment prevents the food from sticking and the foil keeps the dish clean. Just lift both to the trash and nothing to scrub.

Alas, I don't care for roasted eggplant, but that's my bad luck.

(or meat instead )
