What's for Dinner, Thurs., Oct. 24, 2024

Posting early due to working late.

I have a couple small eggplants. Even though it's nice here weather-wise, they are not going to get any larger so I might as well pick them. The idea for tonight is charred baba ganoush. I have numerous flatbreads, naan, etc. to enjoy with it, plus I have peppers to use as "chips" to dip with.

My recipe calls for cumin, garlic, lemon juice; the usual.

I'll probably have a little broccoli rabe and pasta on the side, though I might add chicken broth to it and make it a cup of soup.

Kombucha flavor is pineapple-blueberry.

Dessert is melon and tea.

Loretta met her cousins for a four hour lunch meeting at a local restaurant. After enjoying visiting with her cousins she stopped at Casey's and brought home a pizza.

I had a huge lunch and didn’t feel hungry, so I had a small bowl of Ben & Jerry’s "Churn Out The Vote" ice cream. Cute name, but I didn’t much care for its flavor.

Fresh trimmed snap peas, stir steam-fried in veggie broth and olive oil, with chopped red bell pepper, carrots, mushrooms onion and garlic. Add crushed red pepper flakes, dried oregano and basil. Mix in cannellini beans and toss with whole wheat penne. Sprinkle with fresh parsley and vegan parm. Glass of red wine. No dessert

We're in Montauk, Long Island for a couple of days and we scored a beautiful piece of sea bass from a local fish market. It'll be floured and sautéed in butter and white wine. Pan seared asparagus spears with garlic and mashed potatoes with butter and chopped chives. Strawberries for dessert.

We're aboard Pelagic for our last mini-cruise of the season. We're docked tonight and plugged in to shore power so we have electric heat. Regardless, It's quite comfortable and the lovely fall environment in the east end of the island is gorgeous! The sunset was stunning!

The First Mate voted early in Pennsylvania last week and I'll vote early in NYC next week.

I don't know if it's authentic to add veggies to the simmer sauce, but I did: broccoli, mushrooms, onion, yellow bell pepper and carrots.
