What's for Dinner, Mon., Oct. 28, 2024

Turkey chili with grilled Poblanos and shredded Cheddar cheese. I used garden celery, onion, chicken stock, organic tomatoes from a jar, and the usual chili seasonings, such as chili powder, a little cayenne, but I could not find my cumin. I added Better than Bouillion to make it ever tastier.

To go with it, half an air fryer cheese sandwich. It will have a little tomato chutney on it.

Small garden salad on the side. Vinaigrette, homemade.

Cherry coke to drink.

Dessert: half a caramel apple which has been dipped in chopped peanuts.

2. Beans and rice Provencal style

Cook imported organic brown basmati rice ( the only rice I use in any dish because of its low arsenic content). Steam-stir in veggie broth, diced celery, carrots, green pepper, red onion and garlic. When almost done add a can of diced tomatoes and more veggie broth. When veggies are soft I add a can of drained and rinsed organic black beans and about a half cup cooked peas. Turn off heat and add a few lg sprigs of fresh thyme and let stand for 10 minutes and remove. Cayenne pepper, black pepper and salt to taste. Mix in the cooked rice. Enjoy with a nice chilled white wine.
Eggless banana bread for dessert.

5. Lobster Mac & Cheese

My wife bought some little lobster tails. 5 pack for a pretty good price.
I just poached them in salt water, ice water shocked them, chopped them up, and added them to the sauce just long enough to get warm.
I used a roux (butter based), added sherry to stop the cooking and when the alcohol was gone I added half & half & milk.
I used cheddar, swiss, gouda, mozzarella, & parmesano.
I also crumbled up 4 slices of bacon.
Poured the cheese sauce over penne rigati.
Then sprinkled chopped scallion tops.
My wife loved it. I think I would do a few things differently next time.
This was a first attempt.
