What's for Dinner, Sat., Nov. 2, 2024

Appetizer: Turmeric-cauliflower dip with club crackers. Made this yesterday but had little because of all the other items I made. I really love it with this preserved lemon.

I like the preserved lemon so much I intend to go to WF and get 8 organic lemons to preserve some. You can buy them preserved, but I'd rather make them. The ones I have now are a purchase of the RG's, but I'm almost out. They are also terrific in little bits on salads.

Sauteed, shaved (mandoline) Brussels sprouts using sesame seed oil. Hazelnuts, toasted.

Stuffed kabocha squash half, using Italian sausage, bread crumbs, chopped celery and onion, plus grated Gouda cheese on top.
Kombucha, pomegranate.

Dessert: Dove chocolate bar, the small size, raspberry with dark chocolate.

3. Stuffed Red Bell Peppers

Blanch trimmed red peppers briefly in boiling water. Wipe dry. Sweat in olive oil: minced onion, celery, carrot, cabbage and garlic. Mix in toasted homemade whole wheat croutons, raisins, vegan sausage crumbles, sliced mushrooms and spices. Enough veggie broth to moisten the mixture. Stuff peppers and bake covered in foil @ 375 for 35 minutes. Uncover and bake for 15 minutes more. Served with a simple tomato sauce on the side. Iced green tea as the beverage. Bon appetit

I had some yesterday that my daughter made, so after I got the kitchen tidied up, I made a batch.

I might cook some macaroni tomorrow and make chili mac.

can of tomato sauce. chick boullion, garlic, italian seasoning, black pepper. cut the pepper, onion + celery + put in fridge. cooking shows are cooking veggies way to long. added the veg to the cold soup. zap for 3 minute for crunchy soup. used to dip awesome italian bread. only had some artisan bread.
