Lots and lots of coffee. I’m meal prepping today. Well, not so much meals as ingredients I can throw together quickly to make meals. Living by myself, that seems the best way to eat healthy and avoid takeout. Anyway, breakfast today is the daikon radish that didn’t fit into the pickle jar along with hummus I made yesterday. A bit odd, but not bad.

that has a hummus-daikon combo in a wrap.

I have a beautiful daikon at the garden that I intend to harvest soon. They are very mild, so make an easy-to-use ingredient.

Anyway, I do what you do in prepping ingredients. I like to have a salad around, too, in the form of cleaned leaves and that I can add whatever I want to it.

This morning I'm having tuna salad on naan bread. The tuna is yellowfin and it also has basil pesto mixed in. The veggies I chose for it are scallion greens, asparagus bits, mayo, white onion. I sauteed pineapple sections from a fresh pineapple in sesame oil and added them. Nice touch.
