Chicken with cherry sauce, roast sweet potatoes with cinnamon and maple, and spinach sauteed with garlic, dressed with lemon juice.

Broccoli florets stir-steamed in evoo and veggie broth with chopped onion, garlic and thinly sliced cremini mushrooms. Add butter beans and toss with whole wheat rotini. Top with chopped fresh parsley and vegan Parmesan cheese. Glass of Pinot Noir paired well. We ate our dessert for breakfast this morning. Cheers! 🥂

Pork tenderloin with a rub I created by throwing things together. Zucchini sautéed in salted butter. A small salad concoction of Sunsweet flavor bomb tomatoes, diced Cubanelle peppers and crumbled feta with Italian dressing. Ice water to drink.

Either sweet potato pie, vanilla ice cream or chocolate dipped coconut macaroons for dessert later.

I was so attention span challenged I forgot to add a sweet onion to the zucchini but it was still delicious.

I was determined to do something special for myself because it's been such an emotionally draining week.

We all need to be taking care of ourselves and each other more now than ever. Dark days ahead.

If I could have I would have loved to have a dinner party with all of my new C & B friends. The hugs would have been epic!
