What's for Dinner, Thurs., Nov. 14, 2024

I made Loaded FauxTato salad using cauliflower for tonight, and am making a corned beef sandwich with Swiss and sauerkraut on rye bread, toasted. Also 1000 Island dressing.

Pomegranate kombucha.

No dessert 'cuz I had a chocolate chip cookie at lunch, but a big mug of Bengali spice tea will do the trick.

I found a new butcher! They're fantastic, the selection is incredible and their prices are VERY reasonable.

It's called Butcher Boys and it's located in Monticello, NY. They have preset combinations of meats that include chicken, beef, pork, sausage, etc. at various price points. They also sell everything a la carte. Today I picked up some filet mignons. They were supposedly 8-ounces but when I got home and weighed them, they were 10-ounces! Each piece was $11.00 which is significantly less expensive than our local supermarket (which is of lesser quality; an online dealer I've bought from charges $50/filet). They also sell game meats including rabbit, goose, turkey, venison, elk and other meats. I think I found my new "toy" store!

Since I'm alone tonight, I'm going to broil a filet and make a Béarnaise sauce for it. A salad of Romaine, slices of green and orange bell peppers, red onions, black olive slices and Blue Cheese dressing will cover my greens and hash browns and a nice Bordeaux will round it out.

Strawberry glace, an espresso and a shot of Ouzo for dessert.

3. Three Mushroom Stir Fry

Sweat minced red onion and garlic in a small amount of evoo and veggie broth (or water). When softened and liquid is almost evaporated add a large amount of thinly sliced white button and cremini mushrooms. Then add reconstituted chopped dried black mushrooms to add that deep mushroom umami. Turn up heat and flash fry until the liquid the mushrooms produce is almost evaporated. Add chopped herbs, today I used tarragon and parsley, s&p to taste. Let it rest for a few minutes. Served over red lentil rotini. Pan toasted garlic bread on the side. Iced green tea with lemon Cheers!
