Zucchini Noodle Salad with Tahini-Ginger Dressing.
I'll use my zoodler, and the recipe, from the Mostly Meatless cookbook I've been working from, recommends not cooking the zoodles--leaving them raw. Has lots of colorful vegetables: red and gold bell pepper, broccoli, carrot, scallions.
Slice of cold roasted chicken.
Dessert: Turkish cookies my friend gave me. Tea.
These cookies have a shortbread type exterior and are stuffed with some type of fig mixture. They have a pattern in the cookie. Quite a production, really. I am always happy he remembers to bring them back for me from his trips.

(1,991 posts)Lavash bread slathered with homemade balsamic-walnut dressing. Then I piled on Tofurky ham slices, sliced tomato and red onion, sliced avocado, vegan cheddar, drizzle more dressing, add a big handful of spring mix before rolling it up tightly. Sitting in lawn chairs, watching the sun go down over Lake Erie as we enjoyed the wraps. Cheers!🌞
