What's for Dinner, Feb. 19, 2026

Appetizer: cold shrimp and cocktail sauce, plus herring.
Tuna and vegetable kabobs, marinated in garlic, thyme, and olive oil.
Multi-colored quinoa.

My contractor is still working on the refrigerator removal, so the appetizer may have to last until 8:30!

Kombucha: tangerine.

Dessert: Chocolate.

Stuffing, and green beans flavored with bacon grease (what can I say? We had bacon for breakfast!) Carrot cake with cream cheese frosting, and coffee for desert.

6. Spicy Green Beans with Tofu and Penne

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, cut green beans, sliced mushrooms, red pepper flakes and minced garlic. When done I added air-fried crispy tofu, a dollop of vegan butter and tossed everything with cooked whole wheat penne. Homemade vegan parm on top after plating. Cheers!🥂

…. and was mortified to find they were still in my fridge tonight. Thankfully, the crisper did its job and they were perfectly fresh. *phew!*

Halved and browned in a little olive oil, tossed in some walnuts, dried cranberries, salt, and onion powder, and when tender, I sloshed in a good amount of raspberry-walnut vinaigrette until it thickened up and coated everything.

Damn, but it’ a good thing I love this because I’m going to have to eat the whole skillet’s worth.

Obviously, there’s no room for anything else.
