What's for Dinner, Mon., April 20, 2026

Tuna steak, basted with garlic, olive oil, and herbs, and given a crispy exterior using the air fryer. Served over a bed of quinoa and sliced zucchini, cherry tomatoes, garlic, onion, and herbs.

Kombucha: cherry-ginger.

1. Turned leftovers into fried rice

I had rice left from Friday. I had steelhead trout left over, too. Yesterday, I made salmon-like patties from the leftover fish and had those with leftovers from the low ountry boil on Sat. I had 2 patties left today, so when I put the fried rice together, I broke the patties into the rice. Surprisingly good. I cooked a serving of pot stickers to go along.

I'll have some frozen blueberries for dessert. Waiting for the topping to thaw

… so went the easy route and threw some goodies in the IP—soy curls, lots of seasonings, BBQ sauces (had some I’ve despised that I wanted to get out of the fridge—plastic bottle so thick you couldn’t even squeeze it, and so sickeningly sweet I suspect it was full of corn syrup—plus Green Dragon/jalapeño and Stubbs spicy), wrapped up in WW tortillas with refried pinto beans, lettuce, vegan cheese, and pickled jalapeños, with corn tortillas to scoop up the inevitable mess.

Been a while since I’ve actually made a proper meal myself (son has become the designated chef lately), and I feel pleasantly stuffed and pleased with myself.

This could change, depending on how many meals of leftovers this turns into. *grin*

And YAY! The Cubbies won their sixth in a row!
