What's for Dinner, Tues., June 2, 2026

Chickpeas in broth with shallot, chili, and gochugang.*

Toasted corn muffins with butter.

Cherry kombucha.

Dessert: low-sugar vanilla ice cream with dark chocolate covered potato chips. Decaf coffee.

I might get to sample it when I visit

I had marinated, roasted tofu with veggie fried rice and chicken dumplings.

Blueberries and cool whip for dessert.

The only place that sells it in a smaller package (7.1 oz.) is Trader Joe's. Every other place that sells it, like the grocery stores, sells it in the larger container. I like to have the smaller container and buy it more often so it's fresh.

Do try it! It's quite versatile and I think you could have some fun with it.

I’ve got half a bag of stale tortilla chips and (I think… I hope!) a can of refritos. Will simmer up a batch of spicy TVP (think burger) and top with jalapeños and (vegan) cheese.

Should also add a tossed salad to balance it out because we have mixed greens up the wazoo.

Got up and whipped up a big pot of soup. This version has vegetable broth, onions, shallots, celery, carrots, cabbage, red bell pepper, zucchini, peas, black beans, cannellini beans, spinach, crushed tomatoes, tomato paste, whole wheat pasta shells, garlic, basil, oregano and parsley. Had toasted baguette to go along with the soup. Cheers!🥂
