I just dug 30 pounds of red potatoes out of one of my 2 rows of spuds

If I get that much out of my "storage" potato row, I'll be set for winter.

Along with the already-frozen tomato sauce, cabbage, peppers. broccoli and kale.

and the 2 dozen hugh butternut squash still on the vine and the brussels sprouts((that the wood chuck saved for me).

I ain't spendin' no money on veggies this winter.

Could you share how you freeze your kale? Just freeze it straight up, or parboil, or ...?

Thanks in advance ... I have been hearing many opinions on this (also on freezing avocados).

The only way I could think of is to make huge vats of mashed potatoes (which freeze well).

What do you do? Even I couldn't eat 30 pounds of potatoes before they get grungy.

I want to grow more green beans next year and put them in Food Saver bags and freeze them. Do you have any idea if that would work?

We canned 46 quarts of hot wax peppers this year, and also 31 quarts of tomatoes. So we are all done with canning now!

Oh yes and 11 half-pints of elderberry jelly!

I would love to try a butternut squash plant, too! Used to grow red potatoes. I like them better than russets.

BTW we also donated 60 lbs. of our produce to the local food bank.

and freeze a cup at a time in ziplock bags.

The peppers I slice into long strips, freeze on a sheet, then transfer to ziplock bags - then back in the freezer.

13. We freeze lots of peppers by just dicing them and packing in freezer bags. They last a long time

and hold up very well. Not exactly crisp and crunchy when you thaw them, but they are absolutely fine for cooking and using in salads.

lots of feed for the deer, squirrels and probably means a long, cold winter (down to 39f tonight).

I really miss that sucker. Great deal of satisfaction in seeing many brightly colored jars of veges and fruit on the shelves.

I just core peppers, put in a bag and throw in the freezer. Always tasty for chili and casseroles.

I just wish there was some way to freeze watermelon.....sigh.

But some are starting to go bad, even giving a bunch away. It takes me 3 days to eat a 30 lb watermelon.
