Much of the moon’s southern pole is perpetually in shadow. And so, there’s a better chance for there to be ice there.

and indeed, the interiors of rimmed craters or other depressions would never receive direct sunlight. So there's a non-negligible *fraction* of the surface which doesn't receive direct sunlight. There's always starshine so it wouldn't be pitch dark within the crater.
