Just kidding!
Parboil the sweet potatoes until almost tender. Cool, peel, cut into slices, or cube, as preferred. Put in buttered baking dish. Add butter, brown sugar, and bourbon to taste (the original recipe commented that a quarter cup of bourbon per person was about right). Cover, bake 350 fo 35-40 minutes. Serve.
One friend, when I introduced her to this recipe years ago, would, after removing from the oven, whip the entire contents like mashed potatoes. Either way is good!

I can eat them fried or in other recipes, but I don't like the traditional T-day version

I don't like that sweet version at all. I make a beef stew with them instead of white potatoes

cajun is a good substitute for Jamaican Jerk but the Jerk version is outstanding!.
