Being a supertaster is not just having more of all taste buds, but more of specific ones. Bitter is the flavor most often associated with supertasters, but some other flavors are strong for some of us. Sour flavors are as bad tasting to me as bitter. Sour ball hard candy? Forget it. But I do like some sweet and sour dishes if they are sweet enough with only a hint of sour.
I tolerate dark chocolate better now that I'm older, but not if it has too much cocoa in it. I love milk chocolate.
I've tried dozens of ways to cook liver, but nothing masks the bitterness enough for me to eat it. I tried coffee with so much sugar and cream that it was hardly coffee any more, but all I could taste was the bitterness.
