You get to see behind the bar, under the glassware, back in the kitchen, in the walk-in fridge. He's found dead rodents, live rodents, food stored next to cleaning chemicals, mold & grossness that would make you gag. Some kitchens have so much grease around the cooking area, from lack of cleaning, that he's closed the place down due to fire hazard. I realize these are failing establishments, but I dated a man many, many years ago, who delivered liquor to restaurants & he told me, you'd be surprised at the number of finer restaurants in town that have disgusting kitchens. We never ate at those places, BTW.
