Rice and beans provide a complete protein. You don't have to mix them together, just eat them near each other.
Nuts provide "good" fat.
Olive oil, extra virgin is best, provides "good" fat and flavor.
FRESH IS BEST when it comes to spices.
Do Not Fear the Spice Rack. Enjoy what you eat, if you are 'going vegan' you can have flavor, you don't have to eat grass and twigs.
Get balanced nutritionally, you can get quite ill by neglecting that.

Beans ,nuts, legumes, rice, avocado nutmilks nut butters . What is your aim ?No dairy wheat & meat?
