I had almond flour pancakes with date syrup for breakfast [View all]

I haven't had pancakes since before Oct. 2019. Before that, I had traditional, high test pancakes about once a month or less. I don't know if I wanted the food as much as I wanted the comfort of the food.

I just learned about date syrup. Kroger advertised Date lady brand, with a picture of the back label and it said 0 carbs, and 13 grams of fiber. I think that is an error on that label, somehow. Because date syrup has 13 grams of carbs and 0 fiber. Anyway, I have it.

I made a 1/2 recipe of almond flour pancakes, with a regular slather of butter, and sparingly used the syrup. I won't lie-they weren't light and fluffy, but they looked like pancakes and I got a stack of 3. the recipe is simple, with on-hand ingredients.

White flour pancakes with syrup is about 90 grams of carbs. My breakfast came in about 30 carbs.

I might do the cloud pancakes next time, and see if I like the texture better.
