Olive Oil versus Extra Virgin Olive Oil [View all]

Can I use (regular, non-EVOO) Olive Oil if the sole purpose is to cook on the stove, e.g., making Sunday Gravy?

Or should I go full EVOO no matter the purpose, e.g., making salad dressing, hummus, mayo, etc.?

I plead ignorance. Thanks in advance.
