1. Non-EVOO is darker, thicker, and has a more obvious 'olive' kind of taste

And it's smoke point is lower so it's inadvisable for higher-heat cooking. Basically 'pure' olive oil has its charms for certain purposes/dishes (the dip you get for bread in some restaurants that's OO and Balsamic, they'll typically use Pure for it's flavor), EVOO is more versatile but w/a bit less character.
