Filling: 1lb. ground chuck with salt, pepper and garlic, browned with most of the grease drained, then most of a can of refried beans and about 1/2 c. or so of salsa (Pace), mixed well and heated through. Should be pretty thick, not runny.
Will have with sharp cheddar cheese, chopped green onions, sliced black olives, chopped tomatoes (their labeled as mini marzanos, but I know they aren't authentic, but still good), red leaf lettuce, pickled jalapeno slices, sour cream, salsa and Frank's Red Hot.
Homemade guacamole with chopped tomatoes (same as above), chopped green onions, salt, pepper and garlic, fresh squeeze lime juice and Frank's Red Hot to taste.
Found these gigantic whole wheat tortillas at WinCo, much bigger than regular burrito-sized, so I'll stuff one really well and we'll split it. I originally picked these up 1.) because it's hard to find ww tortillas any larger than soft taco-sized anymore, and 2.) I used them for this recipe earlier in the week:

I've had it bookmarked for years and this was the first time I made them. It's a delicious and easy recipe for a home kitchen without having to shave meat from a large spit. I didn't have any oregano (because I don't like it), so I subbed a tiny pinch of dried thyme and a slightly larger pinch of dried basil. Got great reviews from B., so will definitely make again.
ETA: WinCo had fresh red cherries today for $3.98/lb., so I bought a big bag just for us to munch on.
