What's for Dinner, Thurs., Sept. 19, 2024 [View all]

I understand the weather is going to be cooler, so I thought I'd start some soup, specifically squash soup since I have some from the garden. I found this easy soup recipe which offers great versatility with the toppings. Just cook the squash with an onion in chicken broth, puree it, and add S & P. The cookbook author has a list of toppings or additions to choose from so you can customize to whatever you're in the mood for or whatever you have on hand.

I'm choosing a swirl of pomegranate molasses and roasted pumpkin seeds and cashews.

I'm using one of my orange kabocha squashes, which I grew for the first time this summer:



Others in the pic are acorn squash.

The cookbook I found this in is called The Everyday Squash Cook by Rob Firing. It's a digital checkout from my public library.

If I get this soup finished tonight, I'll add a grilled cheddar bratwurst to the meal. If not I'll have a leftover of some sort.
