4. Leftover soup

On Saturday evening I made hot dogs for my wife and daughter wrapped with Pillsbury crescent rolls. Fast, easy, and it made them happy. For myself I threw together a soup: about half a package of frozen corn, steamed; a can of pinto beans, drained; a can of diced tomatoes, undrained; some chicken broth and a little over half a cup of rice. I simmered this for about 45 minutes, adding a couple teaspoonfuls of cumin and a teaspoonful of chili powder, and dug in. I mixed some Mexican cheese and crushed Doritos in the bowl.

Nice. Tasty soup with a taco-ish flavor. I tried to get my daughter to try it but failed over and over. So since I'm working tonight I brought it with me, and I'm microwaving it as I write.
