Peeled medium sliced sweet potatoes, cauliflower florets, chopped green bell pepper, chopped celery, chopped onion and minced garlic. Toss with olive oil, oregano, hot pepper flacks, and a can of drained garbanzo beans in a lg mixing bowl. Pour into a 9x13 inch baking pan sprayed with olive oil. Bake uncovered at 400 degrees for 60 minutes. 15 minutes before done, toss on some sliced mushrooms. When done, stir everything and enjoy!
