Cheddar and ham with diced onion, Cubanelle pepper. It's in the oven now and smells pretty terrific!

The quiche did indeed turn out to be delicious. There was one optional ingredient in the recipe that I am glad I added. It called for optional Dijon mustard, only a tablespoon but it added a nice little zing to every bite.

Here's the recipe for anyone interested:

Easy Ham and Cheese Quiche

Course: Breakfast / Cuisine: American
Ingredients
6 eggs
1 cup half & half (or whole milk)
1/2 tsp salt
1/4 tsp black pepper
1/4 teaspoon onion powder
1 tablespoon Dijon mustard, optional
1 cup diced ham
1 cup shredded cheddar cheese, divided
1/2 cup shredded Swiss cheese
1 9-inch frozen pie crust, deep dish
Instructions

45 minutes
1 Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) with a baking tray on the center rack.
In a large mixing bowl, whisk the eggs for 20-30 seconds. Add the half and half, salt, pepper, onion powder, and
mustard (if using). Whisk until blended.

Stir the diced ham, 3/4 cup of cheddar cheese, and all of the Swiss cheese into the egg mixture. Pour the filling into
the empty pie crust and sprinkle the remaining cheddar cheese over the top.

Carefully place the quiche onto the hot baking tray. Bake for 40-45 minutes or until the quiche is set and the top is
golden brown.

Remove the baking tray from the oven and let the quiche cool for 10-15 minutes. Serve warm, at room temperature, or
cold.
