As to getting spammed with email, read up on how to set up aliases for whatever email provider you use. This allows you to give the site an email address that will put it in your normal email but you can delete it at any time and it no longer exists.

As to phone texting and calling, yo can get an inexpensive home phone service or a number that forward things that you can use for filtering things.

Then, again, you can always stop using sites that require login to get reviews. There are plenty of places that don't require that. The types of sites you are using are making money off referrals and your personal info and their "ratings" I would not trust.
