Do it. I have no idea what the travel climate is in Greece at this point, so I'd check that. I was in Santorini (stayed at Ia) for a week a few years ago in September, which is the beginning of off season. The cruise ships would flood the town a bit during the day, but they all left at night which allowed us to wander around almost alone in the long evenings. Lots of great restaurants. The best was down at the little fishing village part of Ia, down by the waterfront. After a windy day the waves were breaking on the sidewalk there and we had an amazing fish dinner. One thing I heard at every restaurant we went to was "you want me to move that cat?" In the off season I think there is about a 100:1 cat:people ratio there. We stayed in a cave too! Of course the villages, their crazy streets, their white walls and blue domes, millions of stairs, the sun, the sky, the water are all stunning. Well worth the pain to get there.
